Less known dishes in India that you must try?

India is a concoction of various races, cultures and traditions, and of, course food. Pretty sure we all know quite a lot about the common Indian food, which are readily available at any Indian restaurant in the world. The fact is there are certain dishes that make it to the top dish in their regional cuisine, but we haven’t even heard their names. They are delicious and mouth-watering, relished by most households in every state in India. These preparations are made with a variety of ingredients, some that are always there at home, and some that might be slightly difficult to get hold of.

These dishes could be from the South Indian states of Tamil Nadu, Kerala, Karnataka, and Andhra Pradesh. They could also be from the “Seven Sister States,” Arunachal Pradesh, Tripura, Meghalaya, Assam, Manipur, and Mizoram. Or, they could be from the northern and western parts of the nation. Wherever they may have originated, let’s take a break from the same old biryanis, tandoori chicken and parathas and get familiar with these lesser known dishes which also come under the wide Indian cuisine...

North eastern style tribal delight
Many are unaware of North Eastern tribal cuisine, but it's delicious. "I hope it comes onto restaurant menus here," smiles Assamese food evangelist Gitika Saikia. "I did a pop-up in New York and it was sold out." This food uses locally-grown herbs like maan dhoniya(coriander). Dishes include pork with bamboo shoot which is had at weddings kolkolia maas or fish in black sesame and aaitar. "This translates into grandma's dessert, though in the North East we have no concept of dessert after meals. Instead, you get tea and pitha (rice cakes)," she says

The next time you try a pop up, opt for Himachali cuisine. Says home chef from Shimla, Sherry Malhotra, who has been dishing it up. "The food has influences of Kashmir, Punjab and Tibet, so you will see a lot of yoghurt, dairy and lentils in it." One of the most popular dishes includes chana madra, prepared during feasts. "This is a yoghurt gravy with chickpeas, jackfruit and spices. Other popular comfort foods includes sepu vadi — a spinach-based gravy eaten with babru — a fermented roti and turkiya bhaat, which is in essence, the Himachali pulao. "You must also try the char meat, a smoked preparation, prepared in a chulha in villages. The meals end with khus khus-makhane(lotus flowers)ki kheer," she informs..

1.Punjabi Thali:

3.Bengali Thali:

The other members on the Bengali Thali are, Shukto, 5 types of fries- Aloo bhaja, Potol bhaja, Kumro bhaja, Begun bhaja, Uuche bhaja, and torkari, Daal, chutney, and the very famous Fish. They are masters when it comes to preparing the ultimate melt-in-the-mouth sweet. Rosogolla, Mishti Doi, Kalo Jaam, Bengali Rabri, Gujias, Jibe Goja, Jolbhora Shondesh, the list goes on. 4.  Gujarathi Thali:
Gujarati thali is mostly vegetarian. Meals are served on a thali, a metal tray on which roti, rice, and small bowls are placed. A different kind of sweet flavour is prevalent in almost all the food items. Gujarati meal usually consists of rice, bread, rotli, and vegetable curry called 'Shaak'. They also have a variety of snack items like,thepla, maal purah, puri, bhakhri, and puran-pohli, hari and khakhra, dal-dhokli, chevdoh, dhokla, undhiyu, khaman, bhusu, fafda, dhokli, papdi, and sev mamra. A Gujarati thali shall treat your palate to many a flavours in an instant.


5. Maharastrian thali;
  Maharashtrians are known for their extremely spicy with different masalas - so watch for what you ask. Chicken, and fish are the common non-veg items you’ll find here. They have a great variety in Pickles. The thali will have a little amount of rice in one corner with daal in a bowl, and chappati on the other corner. You can pick what comes to your plate. There are a variety of bhajis like, batatyachi bhaji, vaangyache bharit, aamati, matkichi bhaji, and many more. Then you have sabudaana vada, a refreshing glass of mattha, kanda poha, danyachi usal and the awesome pav bhaji, which are irresistible. Not forgetting the varan bhaath which is the king of the thali. With sweets like aamras and sheera, the thali is certinaly not lacking when it comes to desserts. Pooran poli is another famous sweet dish that you will find.


6. Goan Thali
Who knew that Goan Thali could be as awesome as Goa's beaches? It’s a complete Indian meal at your fingertips. Goan food is synonymous with sea food, rice, coconut, fish and yes, kokum! You have Goan rice bhakri, Goan daali thoy, kele ambat, vegetable vindaloo, Goan kokum curry, and Goan banana halwa to top it up! Goan cuisine is also characterized by having some of the hottest curries, like Vindaloo. Due to its coastal location, seafood is also quite prevalent.  



7.Kerala thali:

Indians are known for elaborate meals, and the Kerala thali exemplifies it best. Kerala’s food is generally hot and spicy. The food is traditionally eaten by hands, and served in banana leaves. Abundant use of coconut oil, mustard seeds, curry leaves and coconut milk are used in their daily cooking. There is no 'rule' to this thali and it contains liberal helpings of rice, sambhar, kootu (vegetable curry cooked with lentils), kosumri, paapadam, curd, and for dessert, there's paayasam (a sweet made with rice and lentils) to complete the meal.
